Ask the cashier to first charge your card for the exact amount available on it, then pay the remaining balance with another payment method.
For online purchases, check if the merchant allows split payments; if not, you may be able to use your remaining prepaid balance to buy a merchant-branded gift card and then use that gift card plus another payment method.
